Vegetarian Chili

Sometimes, like today, I get busy and need to prepare dinner quickly to avoid ordering takeout. This turned out pretty good. Since my daughter is a vegetarian, it can be a challenge to make a hearty meal that will appease both her and my son .

This was pretty easy and came out very tasty.

I never serve Chili in our house without rice & tortilla chips. It took less than half an hour to prepare this meal. You can always add a Burger on the side for devout carnivores in the family

Chili & Rice Dinner

Ingredients:

1 Can Prepared Vegetarian Chili
1 Can Chili Beans in Tomato sauce
1 Small Onion (chopped)
1 Green Pepper (chopped)
1/4 Cup of Chunky Style Salsa
1/4 Cup Spanish Style Tomato Sauce
Chili Powder to taste

Sautee onion & green pepper until onions are translucent and peppers are soft in a medium saucepan. Add remaining ingredients. Simmer together over medium low heat about 25 minutes while preparing rice & vegetables. Serve Together with or atop a mound of steaming rice.

Schnitzel 2.0

Oma's Schnitzel is fantastic, but as always like to tweak recipes to make them uniquely my own. Besides, Oma makes her own bread crumbs. I'm not going that far. Family and friends seem to enjoy mine and I have even used this same method with veal, beef & chicken breasts. Rarely has there been any leftovers so I must be doing something right.

My Mom, Oma & General subscribe to the "Rachael Ray" method so there is never any exact measurements to certain types of dishes but I think this will be easy to follow. Here's how I made these:

PORK SCHNITZEL

Ingredients:

Boneless Center Cut Pork Chops
Plain & Panko Bread Crumbs
Eggs, Canola Oil, Salt & Pepper

Beat chops with a mallet until about 1/4 inch thin. Season with Salt & Pepper. Dip in Beaten Egg and coat with mixture of equal parts of both types of bread crumbs. The Panko makes them extra light & crispy and the regular breadcrumbs brown nicely. Fry one a a time in medium hot oil and drain on paper towels.

Serve hot with warm German Potato Salad (Oma's Recipe My Way to Come)

Why I'm Voting for Obama

After viewing Erin's interview and Kim's latest post, I am compelled to share my thoughts. First, I must congratulate this team and Blogher. From concept to questions, to presentation, you were first class. We are all beneficiaries of your efforts. I am personally grateful and have a tremendous admiration for your work.

My Twitter friends know me as an Obama cheerleader; perhaps some imagine they know why. In addition to my agreement with Obama's positions on the "issues", Erin's comments last evening during her "live debriefing" confirmed my view further on Barack Obama, the man: his character and authenticity. He's a brilliant man with a welcoming countenance, a warm, dignified demeanor and compassionate heart. I admire how he interacts with his wife and children.

Sharing a multicultural heritage with Obama, I am particularly impressed by and sensitive to his unwillingness to be boxed in by labels & stereotypes. He defies them. I'm confident what he has experienced first hand, Hillary nor McCain could ever grasp or begin to understand; even with all their many years of "experience." His global and cultural awareness extends beyond their reach. His candidacy has given my hope for a better America new life. He & his family personify the "American Dream."

Divisiveness and blatant racism has been exposed and bitterly discussed here and everywhere. Some of the discussion has been good and necessary. What has inspired me most during this campaign has been the voices of support for Obama from people of all ethnic, professional, academic, economic, cultural & religious backgrounds. In that regard he has already made a difference. Blogher has made a difference. We can make a difference. Together, we can build a better future for America and all of her children. Yes We Can!
